Huevos Rancheros |
1/2 cup chopped onion Melt butter in skillet and add onion and pepper (add hot chili peppers also if you want it spicy). Cook until limp but not brown. Add tomato and cook on low heat until sauce is slightly thick. Salt and pepper to taste. Serve over scrambled eggs.
